How did it go?

Day One: Today was rough. My craving for meat was at an all time high and some of the meals I ate were bland and flavorless. For breakfast, I had a granola parfait with Greek vanilla yogurt and blueberries. For lunch, I had a homemade avocado salad for the first time which I surprisingly enjoyed. The more meals I eat without meat, however, the stronger the craving seems to grow.

Day Five: Okay, I cheated -- but it was by accident! Last night I was face-timing a friend while eating spaghetti and meatballs. As I was telling her how amazing my dinner was, I realized right away what I did. I immediately stopped eating the meatballs and just finished the pasta portion of my dinner. Let's hope I don't make a similar mistake again!

Day Ten: I'm almost half way done with my challenge and I am starting to notice a few changes. For one, I feel like my skin is getting a little bit clearer and softer. I'm also starting to notice a difference between me and Haley's food choices. My friend, Haley, and I decided to do this challenge together to make it more exciting and enjoyable, but surprisingly we are eating totally different types of meals. I find myself eating numerous salads, whereas Haley is eating many meat supplement options like veggie burgers. Before starting this challenge, I thought that I would have a very limited amount of meal options, but astonishingly enough, I never repeated a meal yet! There are immense amount of delicious salads I find myself trying for the first time. On the other hand, if you decide you want a meal similar to what you were used to having before the challenge started, there are also tons of options like veggie burgers or meatless meatballs! â€‹â€‹

Day Fifteen: Things are starting to get a little easier. When I walk into the supermarket, I don't find myself rushing to the sushi area for some California rolls like I used to do before this challenge started. I also continue to find myself to be a little happier and optimistic without meat in my life. The other day, I tried a farro and spinach salad with grapefruit and goat cheese. Yes, it is as good as it sounds -- maybe even better. 

Day Twenty-One: Today is the last day of the challenge. I lost almost 4 pounds and my skin is clearer than ever! I have tried so many new meals I never would have tried without going vegetarian; I would have just stuck to the same five meals I always eat. This whole journey really opened my eyes to all the different types of foods that don't contain meat. In the future, I can totally see myself trying this out again. Going into this, not going to lie, I was scared that I wasn't going to be able to fully commit to it. I was also afraid of eating the same few foods over and over. Now that this is over I can say that I had nothing to be afraid of.
