Why go through all this?

     My diet -- chicken parmesan, spaghetti and meatballs, chicken salad. Meat, meat, meat. As I sit in my dining room and think about all meals I eat, I notice how much meat I eat in a day. All of my meals, whether that be breakfast, lunch, or dinner, includes meat in some way or another. I remember scrolling through Instagram and reading that meat is highly saturated in fat and can increase your risk of cancer which is in no way good for you. It made me wonder what the deal is with going vegetarian? If 22.8 million people go vegetarian every year, there must be some logic behind it. I thought what better way to figure out what all the fuss is about than trying it out myself. I wanted to go vegetarian for 21 days. The thought of going vegetarian seemed easier after I started to think about other foods I enjoy that don't have meat like eggplant parmesan, penne alla vodka, and garden salads. If I went vegetarian, I would be able to figure find out if there are physical and/or mental benefits associated with eating meat. More specifically, I would be able to figure out if going vegetarian causes a change in my energy, skin, mood, or heart rate. I would also be able to see if avoiding meat for 21 days would result in any significant weight loss or weight gain.
